Did you know that pumpkin is a very versatile, nutritionally rich food?
Pumpkin is rich in fibre, vitamin C, vitamin A and beta-carotene, making it an extraordinary antioxidant food that boosts our immune system.
Although we often associate it with soup, pumpkin is very versatile and, at Vitaminas, you can now also add this ingredient to your salads of choice. This new ingredient is part of the new suggestions from the Good Choices by Mariana Abecasis programme. The new salad created by the nutritionist has lettuce, roast pumpkin, cottage cheese, walnuts, orange and egg, a lowcarb, ovo-lacto-vegetarian and gluten-free combination ideal for all those days when you feel like a light meal rich in vitamins and antioxidants such as selenium, which helps strengthen the immune system.
