Nectarines are rich in vitamins A, C and E, which together are essential for the functioning of the immune system and skin health. They help to produce collagen, promote iron absorption and improve cardiovascular health. The beta-carotene (lutein and xanthine) present in nectarines - that is, the natural pigments with antioxidant, photoprotective and anti-inflammatory action - are excellent allies for reducing the risk of certain types of cancer.
Nutritionist Mariana Abecasis suggests the Nectarine and Salmon Salad, which is based on lettuce and mixed leaves, as well as salmon, nectarines, corn, grated carrots and tomatoes, and can be seasoned with yoghurt dressing. This suggestion is gluten-free and low-carb, ideal as part of a careful diet plan without compromising on flavour. The nectarine and salmon salad is an excellent option to accompany you on beach days, when your body is craving something lighter and more nutritious.
